Hi!
I am new and would like to know if it is possible to record a path on the pan-tilt field of a moving head and then play it back.
And is it possible to record my own path for the fade (in the ‘Selected Cuelist Window’)?

Are you trying to build a ballyhoo or track someone/ something?
Ballyhoo is fairly easy to build. Reference this.
If you are trying to track someone. You could build a cue list with multiple cues that has each position you are trying to hit. Or you could also make an override fader with Q blender to follow whatever with your fader movement. Reference this.
